Minappodi/Urad dal powder

Urad dal powder or popularly known as minappodi. This can be accompanied with neyyi or ghee with any tiffins or just white rice. here is the recipe from a book. I do not know the book name otherwise the credit would have been given to the author. here is the recipe:


Ingredients:
Urad Dal
Red Chillies
Jeera
Asafoetida (Hing/Inguva)
Salt to taste

Method of preparation
Roast the Urad dal, Jeera, Red chillies separately. Grind all of them together to a powder. Adjust salt and spices and store the powder in a air tight container.

Palli Kaaram Podi (Peanut spicy powder)




Ingredients
Roasted peanuts
Jeera - 1 tea spoon
Red chillies
Tamarind - lemon size
Garlic - 4- pods
Salt to taste

Method of preparation
Roast the Jeera and red chillies little bit and grind them along with some part of the peanuts. Roast the remaining peanuts along with salt, until they crunchy (not too soft). Your peanut spicy powder is ready to use along with idli's or dosa's or just like that. Add a little bit of oil or ghee while using to add some nice taste.

Peanut sesame powder


I tried it at one of the community friends home and loved it. I got some from my relative the same and my kids loved to eat it with sambar rice or yogurt rice. So I tried it at home and still enjoying it. Hope you like it too. This can be accompanied with several options like with plain white rice or a side dish for yogurt rice, idli or upma etc. So try it with whatever you like ..... explore your options and here goes the recipe..

Ingredients
Peanut powder - 1 cup (roasted and grinded coarsely without the skin)
Sesame powder - 1 cup (roasted and grinded coarsely)
Coconut powder (preferably dry but I used the frozen grated one)
Amchur powder  - 2-3 spoons
Red chilli powder - (according to your taste and spicyness of powder)
Salt - according to your taste
Dhania powder - 1/4 cup ( Roasted and grinded)
Jeera powder - 1/4 cup (Roasted and grinded)
Cilantro - wash, dry and cut into small pieces

Method of preparation
Mix all the ingredients nicely with hand. Make sure the powders and mixed properly and the taste is spread out even. Taste it to adjust salt and red chilli powder. Your powder is ready to go...Enjoy.

Curry Powder or Kura Podi

Kura Podi or Curry Powder is another one that I liked it from Andhra people. Easy to make and ready to use to add nice taste to a simple curry. Here is the recipe.

Ingredients
Chana Dal
Urad Dal
Red Chillies
Some Coriander seeds
Some Cumin Seeds
Very little Oil


Method of Preparation
Add very little oil to the kadai and let it heat. Add all the ingredients and let it fry for two minutes max.


Let it cool and grind the above. Your Curry powder is ready.

Add this curry powder to a simple vegetable curry to make it more tastier. I generally add it to Capsicum, Okra, Tindora, Bottle gourd curries. But this can be added to lot more.. so experiment yourself.

Note: I am not sure about the ratios but this is what I used.
ChanaDal - 2 cups
Urad Dal - 1 and 1/2 cup
Red Chillies - (you can add it according to your spice level.)I added around more than 1 cup of them.
Coriander Seeds - handful
Cumin Seeds - handful
Oil - 1 tablespoon

Sambar Powder

Ingredients:

Chana Dal
Black Pepper
Methi Seeds
Red Chilli
Cumin Seeds

Method of Preparation:
Fry them in little oil. After cool down grind in Mixie. Sambar Powder is Ready.

Ratio of the ingredients I used
Chana Dal - 1/2 Cup
Black Pepper - appr. 6-8 Seeds
Methi Seeds - 1/4 tea spoon
Red Chilli - 5-8 (depends on your spice level)
Cumin Seeds - 1 table spoon
Oil - 1/2 Tea Spoon

Rasam Powder

Hi all, My MIL made this at home. I liked it, as I have lot of Dhania at home which was not used so much at all. So decided to make this at home.

Ingredients
Coriander Seeds - (Dhania)
Toor Dal
Black Pepper - (Miriyalu)
Cumin Seeds - Little(Jeera, Jeelakarra)
Red Chillies - (Lal Mirchi, Endu Mirchi)

Method of Preparation
Slightly fry the all of the above and grind it.

Ratio of the Ingredients
Please make up the quantity you want to make and then use the following ratios to add the ingredients

Corainder Seeds - 1/2 cup
Toor Dal - 1/5 - 1/4 cup
Black Pepper - 10-15 seeds (depends upon your spice level, but would recommend using less)
Cumin Seeds - 2 Table Spoons
Red Chillies - 5(depends upon your spice level)

Terminology
Coriander Seeds - Dhania(Hindi), Dhaniyalu (Telugu)
Toor Dal - Kandi pappu(Telugu)
Black Pepper - Miriyalu (Telugu)
Cumin Seeds - Jeera(Hindi), Jeelakarra (Telugu)
Red Chillies - Lal Mirchi(Hindi), Endu Mirchi (Telugu)
